1 pound baby carrots 3/4 Tablespoon olive oil 1/2 Tablespoon unsalted butter 1-1/2 teaspoons maple syrup 1/4 teaspoon salt
Preheat oven to 475 degrees F.
In a medium size bowl, toss carrots with olive oil and salt.
Spread carrots in a single layer on a baking sheet. Roast about 10 minutes.
Meanwhile, in a small saucepan heat butter and simmer until gold in color. Remove from heat and add maple syrup.
Drizzle maple syrup mixture over carrots. Shake baking sheet to coat carrots thoroughly. Continue to roast (shaking pan once or twice during roasting) about 10 minutes, or until carrots are browned and tender.
