4 medium potatoes, cubed 1 Tablespoon olive oil 1 Tablespoon fresh thyme 1/4 cup Italian parsley 1 cup cucumber, peeled 1/4 cup chives 1 Tablespoon extra-virgin olive oil 1 Tablespoon red wine vinegar 1/2 teaspoon salt 1/4 teaspoon crushed red pepper 2 garlic cloves
Preheat oven to 425 degrees F.
In a baking pan place potatoes and toss with olive oil. Bake at 425 degrees F, turning occasionally, for 30 minutes or until tender.
Place potatoes in large serving bowl.
Meanwhile, in a food processor combine thyme, parsley, cucumber, chives, olive oil, vinegar, salt, crushed red pepper and garlic; process until smooth, scraping sides of bowl occasionally. Add to potatoes; toss well to coat.
