Makes 3 to 4 servings Difficulty
1 pound green beans, trimmed, halved if desired 1 Tablespoon butter 1 cup mushrooms, sliced 1 tablespoon shallots, minced Salt and pepper to taste
Cook green beans in boiling water for 2-3 minutes. Drain, cover and set aside.
In a large skillet, heat olive oil. Add mushrooms and shallots to skillet and cook over medium heat until mushrooms are tender, 3-5 minutes. Add beans to skillet. Season with salt and pepper. Toss and serve.
