Ingredients
1 pound green beans, trimmed and blanched 2 slices bacon, diced 1 Tablespoon shallots, minced 1/4 cup mushrooms, sliced Salt and freshly ground black pepper
Directions
Blanch green beans in boiling water for 3 minutes or until crisp tender. Drain and plunge into ice water to halt cooking process.
Saute bacon in a pan until crisp. Remove from pan and drain on paper towels.
In same pan, saute shallots in bacon fat. Add mushrooms, saute for 2 minutes, then add green beans. Saute for 3 minutes. Toss with reserved bacon. Adjust seasonings to taste with salt and freshly ground black pepper.
