4 pounds sweet potatoes, peeled and cut into 1" dice 2-1/2 cups apple cider, unsweetened 1/2 cup brown sugar 8 Tablespoons unsalted butter 1 cinnamon stick
In a large saucepan, combine potatoes, cider, brown sugar, 6 tablespoons butter and cinnamon stick. Bring to a boil over medium heat. Reduce heat to low, partially cover and and simmer, stirring occasionally, for about 45 minutes or until potatoes are tender.
Let cool slightly and remove cinnamon stick.
In a food processor or food mill, puree in batches.
Transfer to an oven-safe serving dish.
Preheat oven to 325°F.
Dot potatoes with remaining butter, cover and bake, stirring once or twice, for about 20 minutes or until steaming. Remove foil and continue to bake for 5 minutes.
