3 slices gf bacon 1-1/2 teaspoons olive oil 1 large onion, finely chopped 3 garlic cloves, minced 2 pounds green beans, trimmed 1 cup gf chicken stock 1/2 Tablespoon red wine vinegar Salt and freshly ground black pepper
In a large skillet, cook bacon until crisp. Transfer to a paper towel. Crumble and set aside.
Heat oil over low heat. Add onions and cook, stirring occasionally, until golden, about 10-15 minutes. Add garlic and continue to cook for another minute. Add green beans, chicken broth and reserved bacon. Bring to a simmer, reduce heat to low and cook partially covered, until beans are crisp tender, about 30 minutes.
Remove from heat and stir in vinegar. Adjust seasonings to taste with salt and freshly ground black pepper.
