2 Tablespoons unsalted butter 1 shallot, minced 1 red bell pepper, diced 2 zucchini’s, sliced 1/4" thick 2 thin slices of prosciutto, chopped Salt and freshly ground black pepper
In a large skillet melt butter over medium heat. Add shallots and prosciutto and sauté until tender, about 2 minutes. Add zucchini and peppers and sauté until vegetables are crisp-tender, about 5 minutes. Adjust seasonings to taste with salt and freshly ground black pepper.
