1-1/4 cup milk 3 eggs, lightly beaten 1/2 teaspoon salt 1/2 teaspoon freshly ground nutmeg 1/2 cup cheddar cheese, grated 1/2 head of broccoli, stalks trimmed and discarded
Preheat oven to 350°F.
Bring a large saucepan of salted water to a boil. Add broccoli, cook for 2-3 minutes. Drain and rinse under cold water to stop the cooking process.
Pour milk into a small saucepan and bring to a boil. Remove from heat and cool to lukewarm. In a medium bowl, combine lightly beaten eggs with nutmeg and salt. Add lukewarm milk and cheese, beating constantly. Pour mixture into a greased casserole and add broccoli.
Bake casserole for 30-40 minutes or until knife inserted in the center comes out clean. Serve hot.
This makes a delightful vegetable side dish or a lovely vegetarian lunch. It is quite similar to a quiche.
