1 pound medium shrimp, shelled and deveined Olive oil 4 Tablespoons cilantro, chopped 1 red pepper, sliced 1 onion, sliced 1 garlic clove, minced 2/3 cup cream 1 Tablespoon chili powder 1/2 teaspoon cumin 1/2 pound gf pasta Salt and pepper
Cook pasta according to package instructions; drain and set aside.
Heat a wok or large skillet over high heat. Add oil; when oil starts to smoke, add garlic. Saute for 1 minute then add shrimp. Cook, stirring for 2-3 minutes. Remove shrimp from pan; set aside.
Add red pepper and onions; stir and cook until onions soften. Add cream, chili powder and cumin; stirring constantly. Reduce liquid to half. Add shrimp to pan. Stir to coat and add pasta to pan. Blend all ingredients and season with salt and pepper.
