Ingredients
2 firm ripe pears, peeled, cored and cut into 1/4" dice
2 Tablespoons unsalted butter
6 eggs, lightly beaten
1/3 cup milk
3 Tablespoons gf flour
1 Tablespoon sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup mascarpone cheese
2 Tablespoons dried maple syrup or
1 Tablespoon brown sugar
Directions
Preheat oven to 425°F.
In an oven-safe medium skillet heat butter over medium heat, add pears and sauté until lighlty golden and tender, about 6 minutes.
While pears are cooking, whisk together eggs, milk, gf flour, sugar, vanilla and salt.
Pour egg mixture over pears and place skillet in oven. Bake for 8-10 minutes or until center is set. Remove from oven and cut into wedges.
In a small bowl, mix together mascarpone cheese and dried maple syrup. Dollop mascarpone over each frittata wedge and serve.
Tips
This makes a great light dessert or even a wonderful brunch or breakfast meal.
