Polenta Pizza Bake

Ingredients

2 cups polenta
6 cups water
1 teaspoon salt
1 teaspoon unsalted butter
1 teaspoon olive oil
1-1/2 cup gf hot Italian sausage (bulk)
1 cup green bell pepper, chopped
1/2 teaspoon fennel seeds
Two 14.5 ounce cans Italian diced tomatoes
1 cup mozzarella cheese, shredded
Directions
To prepare polenta:
In a large saucepan bring 6 cups of water and 1 teaspoon salt to a boil. Add polenta in a steady stream. Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally, until polenta is thick. Remove from heat and let cool.

Preheat oven to 450°F.

Butter an 11" x 7" baking dish.
Spread polenta in an even layer on bottom of dish. Bake for 8 minutes.

Meanwhile, in a large skillet, heat 1 teaspoon olive oil over medium-high heat. Add sausage, bell peppers, and fennel seeds; cook for 5 minutes or until sausage is browned. Add tomatoes and continue to cook for 2 minutes or until heated through.
Pour sausage mixture over polenta and top with shredded mozzarella.

Bake at 450°F for 5 minutes or until cheese has melted and is browned in spots. Let cool for 5 minutes. Cut into squares and serve.
