Turkey Tortilla Soup

Ingredients

1 dried chipotle pepper
1 teaspoon extra virgin olive oil
1/2 cup red bell pepper, chopped
1/2 cup yellow bell pepper, chopped
1/2 cup leeks, tender white parts only, sliced thinly
2 garlic cloves, minced
1/2 cup green onions, chopped
1 teaspoon cumin
2 cups shredded, cooked turkey or chicken
4 cups gf chicken broth
One 14.5 ounce can whole tomatoes, undrained and crushed
1 cup frozen corn
1/4 cup sour cream
2 Tablespoons fresh cilantro, chopped
Gf tortilla chips
Directions
Place chipotle pepper in 1/2 cup water and microwave on high for 1 minute. Let pepper steep for 10-15 minutes or until pepper is softened. Mince chipotle pepper.

Heat oil in a large saucepan over medium-high heat. Add bell peppers, leeks, garlic, green onions and cumin; sauté 4 minutes or until vegetables are soft. Stir in chipotle pepper, turkey, gf chicken broth, tomatoes and corn. Bring to a boil; reduce heat and simmer for 5 minutes.

To serve, spoon soup into warmed soup bowls and dollop with sour cream. Garnish with fresh cilantro and tortilla chips.
Tips
Use leftover turkey or chicken for this flavorful, heartwarming soup.
