Shrimp Fried Rice

Ingredients

4 cups cooked white rice
About 20 snow peas, sliced diagonally into 1/2" slices
1/2 pound medium shrimp, peeled, deveined and coarsely chopped
2 eggs, beaten
4 green onions, chopped
1 teaspoon ginger, minced
1 garlic clove, minced
2 Tablespoons gf soy sauce
1 Tablespoon Mirin
1 teaspoon hot sesame oil
Canola oil
Salt and pepper to taste
Directions
In a small bowl, mix together soy sauce, mirin and sesame oil.

In a small non-stick skillet, scramble eggs in 1 tablespoon butter; remove from pan and set aside.

Heat same skillet over medium-high heat and add 1 tablespoon oil. When hot, add shrimp and saute until opaque, about 3 minutes; season with salt and pepper. Remove from pan; set aside.

Add 1 tablespoon oil to pan and add green onions, garlic and ginger; stir and saute until fragrant, about 30 seconds. Add snow peas and saute for about 2 minutes. Add eggs and cooked rice. Stir sauce and add to pan. Cook and mix until combined; adjust seasonings and serve.

this dish was easy,delicious and my whole family can eat it and never know it’s gluten free!!
