4 chicken breasts, boneless, skinless and cut into cubes 2 Tablespoons vegetable oil 2 garlic cloves, minced 1/2 red chili, sliced 1/2 cup snow peas 3 Tablespoons fish sauce 1 teaspoon lime juice 1 teaspoon sugar Salt and pepper 1/2 cup mango, chopped 1/2 cup cashews
In a large, heavy skillet heat oil. When hot, add garlic and chili and saute for 1 minute. Add chicken and cook, stirring constantly, until chicken is browned. Add snow peas, fish sauce, lime juice, sugar and salt and pepper to taste. Saute for 2-3 minutes. Just before serving, add mango, stirring to combine. Garnish with cashews.
