For chipotle mayonnaise: 1 dried chipotle pepper, hydrated, seeded and chopped or 1 Tablespoon chipotle powder 1 cup gf mayonnaise
For burgers: 1 pound ground round 2 cloves garlic, chopped 1 cup canned black beans, rinsed and drained 1/2 cup corn, fresh or frozen 1/2 cup jack cheese 1/2 onion, chopped 1 teaspoon chile powder 1 teaspoon dried oregano 1/2 teaspoon cumin 1 teaspoon salt 1 teaspoon fresh ground pepper 4 large lettuce leaves 1 beef steak tomato, cut into thick slices 1 avocado, sliced 4 slices sweet onion Chipotle mayonnaise
Directions
For chipotle mayonnaise: Combine ingredients in a food processor and puree.
For burgers: Prepare a fire for grilling.
Combine all burger ingredients in a large bowl and mix until well blended. Form into patties and place on grill. Grill each side over medium high heat for 5 minutes on each side.
To serve: On four plates place a lettuce leaf, an onion slice, and the burger. Generously spread top of burger with chipotle mayonnaise. Top with sliced tomato and sliced avocado. Serve.
Tips
You can substitute chile powder for the chipotle powder, but you will lose the wonderful smokey flavor and the bite.
