Ingredients

1 pound ground beef
1/2 cup chopped onion
3 garlic cloves, minced
1 cup tomato sauce
1 cup frozen corn
1/2 cup canned black beans, rinsed and drained
1/2 cup black olives, pitted and sliced
3 teaspoons chili powder
1 teaspoon ground cumin
2-1/2 cups water
3/4 cup cornmeal
1/2 teaspoon salt
2 Tablespoons unsalted butter
2 cups Monterey Jack cheese, shredded
1/2 cup gf corn chips, crushed
Directions
Preheat oven to 350 degressF.
Grease an 8"x8" square glass baking dish.

In a heavy skillet, brown ground beef over medium-high heat. Remove beef to a bowl and pour off all but about 1 tablespoon fat.

Place skillet back over heat and saute onion and garlic until onions are soft. Stir in tomato sauce, corn, beans, olives, chili powder and cumin. Add beef back to skillet and reduce heat to low and simmer for 2-3 minutes.

Add water to a medium saucepan and bring to a boil. Add salt and pour cornmeal in slowly, stirring constantly over medium-low heat. Cook and stir for about 10 minutes, until cornmeal has thickened. Stir in butter.

Spread cornmeal into prepared baking dish. Spoon tomato beef mixture over cornmeal layer and sprinkle with cheese. Top with crushed corn chips and bake for 30 minutes. Let cool for 5 minutes before serving.
