1/2 cup ground beef 1/2 cup ground pork 1-1/2 Tablespoons gf soy sauce Pinch of salt 1 Tablespoon peanut oil 1 Tablespoon black bean sauce 3/4 cup gf chicken stock 5 oz beanthread noodles, soaked in hot water for 20 minutes and drained 2 scallions, chopped
Add the ground beef and pork to a mixing bowl and sprinkle with 1 teaspoon soy sauce and salt. Mix well. Heat oil in a large heavy skillet over medium-high heat and when hot, add ground meats. Cook and break up with a wooden spoon until the meat begins to brown. Add bean sauce and remaining soy sauce and mix to blend. Pour stock and noodles into the skillet; cover and reduce heat to a simmer. Simmer for 10 minutes. Toss in scallions and serve immediately.
