4 gf flour tortillas* 1 cup smoked salmon pieces 3 ounce cream cheese, softened 1 ounce goat cheese 1/2 cup chopped red or sweet onions 1/2 cup chopped tomatoes 2 Tablespoons capers 1/2 teaspoon coarse ground pepper 1 Tablespoons chopped chives for garnish 2 Tablespoons unsalted butter
Directions
Have all ingredients prepped and ready to go before you begin. Melt butter in a large flat skillet over medium-high heat. Place cream cheese and goat cheese in a small bowl and blend together. Spread 2 Tablespoons cheese mixture over entire surface of one tortilla. Place the tortilla, cheese side up, in the skillet. Top with 1/2 cup smoked salmon, then 1/4 cup onions, then 1/4 cup tomatoes, then 1 Tablespoon capers and sprinkle with 1/4 teaspoon pepper. Spread 1 Tablespoon cheese mixture on second tortilla and place second tortilla on top and gently press with a spatula. Carefully flip over and cook second side for about 2-3 minutes or until the cheese melts. Remove from skillet and cut into 8 wedges. Sprinkle with chives. Repeat for second quesadilla. Serve immediately.
