13 oz turkey sausage*, sliced 1 cup green bell pepper 1/2 cup chopped onion 1 cup corn kernels 16 oz gf chicken broth One 15 oz can black beans, rinsed and drained 1/4 cup fresh gf salsa 2 Tablespoon canola oil Chopped fresh cilantro for garnish
Heat a large heavy saucepan over medium-high heat and add oil. A sausage slices and saute until sausage begins to brown; remove from pan. Add another Tablespoon of oil and when hot, add green pepper and onion and saute until vegetables begin to soften. Add broth and bring to a boil. Reduce heat to low and add beans, corn and salsa. Cover and simmer for 5 minutes. Adjust seasonings. Ladle into serving bowls and top with fresh cilantro.
