For wraps: 4 large corn tortillas 12 ounces sliced turkey 1 avocado, sliced 2 carrots, peeled and grated 1 medium tomato, chopped 2 scallions, chopped 1 cup sprouts Salt and pepper to taste
For sauce: 1 garlic clove 2-3 pinches of salt 1/4 cup fresh mandarin juice 2 Tablespoons fresh lemon juice 2 small shallots, minced 2/3 cup vegetable oil
For sauce: Mash garlic and salt together with the side of a large knife and place in medium bowl or jar with tight fitting lid. Add mandarin and lemon juice and shallots. Mix until well blended. Slowly mix in oil until combined and smooth. Adjust seasonings and set aside.
For wraps: Lay tortillas on a flat surface and divide all ingredients evenly. Sprinkle with sauce and roll up. Serve.
