1 quart vegetable oil 3 pounds halibut, skinned, boned and cut into 2"x3" pieces 1 cup club soda 3/4 cup gf flour Salt Red wine vinegar French fries
Directions
Heat oil in a deep frying pan to 370 degrees. Heat oven to 200 degrees.
For batter: (This batter must be made at the last minute) Place flour in a medium bowl and add enough club soda to whisk into a smooth paste. Stir as little as possible. Gently stir in remaining club soda. Use immediately.
For fish: Dip pieces of fish into batter and carefully add to hot oil with tongs. Fry the fish in two batches. Deep fry for 2 minutes and turn for an additional 2 minutes. Transfer to a plate or basket lined with paper towels. Sprinkle with salt. Serve with vinegar and french fries.
Tips
You can use other lean white fish, such as cod, haddock, pollack swordfish, or sole.
For french fries: Cut a russet potato into 'steak fry' type strips and fry in hot oil until browned; sprinkle with salt. Keep warm in oven while fish is frying.
