Red Bean Mushroom Burgers

Ingredients

1 Tablespoon olive oil
1-1/2 cup onion, finely chopped
2 garlic cloves, minced
1 teaspoon cumin
1/2 teaspoon chili powder
1/4 teaspoon ground mustard
1-1/2 cup mushrooms, finely chopped
14 ounce can of red kidney beans, drained and rinsed
2 Tablespoons fresh cilantro, chopped
2 Tablespoons gf bread crumbs
1 egg, lightly beaten
1 tomato, sliced
Leaf lettuce
Directions
In a skillet, heat olive oil over medium heat. Add onion and garlic. Cook until softened. Add spices and cook 1 minute more, stirring constantly. Add chopped mushrooms and cook, stirring, until softened and fairly dry. Remove contents from heat and allow to cool in a bowl.
Mash beans with a fork in a medium bowl.

Stir kidney beans into frying pan, along with cilantro. Mix thoroughly. Season with salt and freshly ground black pepper. Add egg and 1 tablespoon gf bread crumbs. Mix thoroughly.

Shape mixture into 4 patties (if too sticky add more bread crumbs). Dredge formed patties in bread crumbs.

Prepare grill.

Spray each patty with olive oil. Grill for 8 minutes, turning once.

Serve with fresh tomatoes and leaf lettuce.
