Grilled Sausage-n-Cheese Quesadillas

Ingredients

1/2 pound hot Italian gf sausage
8 large gf corn tortillas
2 cups cheddar
1 cup cilantro, chopped
1 Tablespoon lime juice
1 tomato, thinly sliced
Olive oil
Directions
In a medium skillet, brown sausage. Drain off fat.

Prepare and season grill.

Set four tortillas on a flat surface. Top with sausage, cheese and tomatoes. Top with remaining four tortillas.

Grill until grill marks appear and cheese melts. (Flip halfway through cooking time.)

In a small bowl, toss cilantro with lime juice and season with salt. Serve over top of quesadillas.
