Orange Carnitas

Ingredients

3/4 pound stir fry pork meat
1 Tablespoon olive oil
1-1/2 teaspoons orange zest, minced
2 cups orange juice, divided
1 cup onion, chopped
1 teaspoon ground cumin
One 14.5 ounce can black beans, rinsed and drained
1/3 cup chives, sliced
1/3 cup gf sour cream
1/3 cup pico de gallo
4 corn tortillas, warmed
Directions
Prepare pico de gallo. Set aside.

In a medium skillet heat oil over medium-high heat. Add pork and saute until browned. Add orange zest, 1 cup orange juice, onion and cumin to pan. Cook over medium-high heat, stirring often, until liquid has evaporated and meat is caramelized, about 20 minutes. Add 1/2 cup orange juice, scraping up any browned bits; cook for about 5 minutes or until liquid evaporates. Add black beans and remaining orange juice; stir until combined and beans are hot.

Top pork mixture with pico de gallo and sour cream. Serve with warmed corn tortillas.
