Ingredients
4 medium to large russet potatoes
1/2 cup cheddar cheese, grated
1/4 cup scallions, chopped
Salt and pepper
2 Tablespoons butter, melted
Gf sour cream
Directions
Bake potatoes at 400 degrees F for 1 hour or until very done. Remove from oven and cool.
Cut potatoes in half lengthwise and scoop out centers, leaving 1/4" with skin. (Save potato for mashed potatoes, or potato cakes)
Brush potato skins inside and out with butter. Sprinkle potatoes with cheese, scallions, salt and pepper.
Place potatoes under broiler and broil until cheese is melted. Serve immediately. Serve with gf sour cream.
