Serves 4 Difficulty
gf corn tortilla chips, enough to cover 4 dinner plates 1/2 pound hamburger 1 clove garlic, minced 1/4 cup onion, chopped 1 Tablespoon chili powder 1/2 teasspoon cumin 1/2 teaspoon garlic salt 2/3 cup cilantro Ddash gf hot sauce 1/2 cup water Salt and pepper 1 cup scallions, chopped 1-1/2 cups tomatoes, chopped 1 cup monterey jack cheese, shredded 1 avocado, sliced 1 cup jicama, match stick sliced, optional 1/2 pound torn lettuce leaves *pico de gallo (see Octs Sauces, Marinades & Salsas)
In a heavy skillet saute hamburger over medium-high heat. Add garlic, onion, chili powder, cumin, garlic salt, 1/3 cup cilantro and hot sauce. Cook until mixed; adding water, salt and pepper to taste. Simmer 10-15 minutes. Drain and cool slightly.
Mix remaining cilantro with greens. Cover individual plates with corn chips and top with greens. Place hamburger mixture, jicama, tomatoes and scallions on top of greens and sprinkle with cheese. Place avocado decoratively around outside of plates. Serve with pico de gallo.
