Italian Style Chili

Ingredients

1 Tablespoon olive oil
1/2 pound bulk hot Italian sausage
1 small onion, diced
2 garlic cloves, minced
1-1/2 Tablespoon chili powder
2 teaspoons ground cumin
1 bay leaf
1 teaspoon aniseed
1 teaspoon ground coriander
1 16-oz. can stewed tomatoes
1 cup gf beef stock
1 14.5 oz. can kidney beans, drained and rinsed thoroughly
1 red bell pepper, diced
salt and freshly ground black pepper
Grated parmesan cheese for garnish
Directions
Heat oil in a large saucepan over medium-high heat. Add sausage and cook until well browned, about 10 minutes. Remove the sausage and drain on paper towels.

Add onion to the saucepan and cook, stirring for about 5 minutes, or until tender. Reduce the heat to medium and stir in the garlic, chili powder, cumin, bay leaf, aniseed, and coriander. Cook, stirring, for 2 minutes. Add the tomatoes, gf beef stock, beans, sausage, and bell pepper. Adjust seasonings to taste with salt and freshly ground black pepper.

Reduce the heat and simmer, uncovered, stirring occasionally, for about 30 minutes. Serve in warmed bowls and garnish with freshly grated parmesan cheese.
