Ingredients
2 Tablespoons unsalted butter 1/4 cup onion, chopped 1/4 cup red bell pepper, chopped 2 medium red potatoes, 1/4" dice 2 mushrooms, diced 1/2 pound gf bulk sausage 1/2 teaspoon chili powder 1/2 teaspoon cumin 1/2 teaspoon garlic powder Salt and freshly ground black pepper 6 eggs, lightly beaten 2 Tablespoons milk 1 cup jack cheese, grated 2 Tablespoons cilantro, chopped Sour cream for garnish Gf salsa for garnish Gf tortillas, warmed
Directions
Preheat oven to 250°F.
In an oven-safe medium skillet, melt butter over medium heat. Add onions and sauté until tender. Add potatoes and cook, stirring often, until potatoes are just tender. Add chili powder, garlic powder, salt and freshly ground black pepper. Remove potatoes from the skillet and set aside.
Add gf sausage to skillet. Stirring often, breaking up sausage until browned and crumbled. Add mushrooms and peppers; cook for 2 minutes. Return potatoes to skillet.
In a medium bowl, using a wire whisk, lightly beat eggs. Add eggs to skillet and cook until set, stirring occasionally. Add cilantro and top with jack cheese.
Place skillet in oven just until cheese is melted.
To serve, garnish with sour cream, gf salsa and warmed tortillas.
