Ingredients
Four 4 ounces beef tenderloin steaks Salt and freshly ground black pepper 2 Tablespoons unsalted butter 1 small red onion, cut into 6 wedges 2 garlic cloves, minced 1/2 teaspoon dried basil 1/4 teasoon dried oregano 1-1/2 Tablespoon cream 4 Tablespoons gf onion jam or orange marmalade
Directions
Season steaks on both sides with salt and freshly ground black pepper.
In a large skillet, heat butter over medium heat. Add onion wedges and garlic. Sauté for 5-7 minutes or until onions are tender but not browned. Remove onions from skillet and set aside.
Increase heat to medium-high. Add steaks to skillet; cook, turning once for about 4 minutes per side or to desired doneness. After turning steaks sprinkle with dried basil and oregano.
Remove steaks from skillet and tent with foil to keep warm. Return onions to skillet and heat through.
Remove skillet from heat and stir in cream.
Spoon cream over steaks and top each with onions and one tablespoon of onion marmalade.
