Ingredients
Four 6 ounce salmon filets, skinned 2/3 cup fresh lime juice 1/3 cup honey 1/2 teaspoon fresh ginger, minced Salt and freshly ground black pepper 8 cups mesclun 1 cup mango, peeled and sliced
Directions
Preheat broiler.
In a small bowl, combine lime juice, honey, and ginger.
Reserve 3/4 cup juice mixture for salad dressing.
Place salmon filets on a broiler pan and baste with remaining juice mixture. Broil salmon 4 minutes per side or until fish flakes easily with a fork, basting after turning it once. Season salmon with salt and freshly ground black pepper.
Divide mesclun evenly among 4 plates. Arrange salmon and mango on top of greens. Drizzle with reserved dressing. Serve immediately.
