Grilled Chicken Tandoori

Ingredients

4 skinless, boneless chicken breast halves
1 cup gf plain yogurt
1 inch piece of peeled ginger, minced
2 garlic cloves, minced
1 teaspoon hot paprika
1 teaspoon ground coriander
Juice of 1 lime
Salt & freshly ground black pepper
1/4 cup cilantro, minced
Directions
Lightly oil a grill rack and preheat the grill. In a large bowl, combine the yogurt, ginger, garlic, paprika, coriander and lime juice. Adjust seasonings to taste with salt and freshly ground black pepper. Place chicken in yogurt mixture and let marinade for at least 10 minutes or for up to 1 hour.

Remove chicken from marinade and grill over high heat for 3-4 minutes per side, or until nicely browned on both sides and cooked all the way through; baste periodically with leftover marinade.

Remove from heat an tent with foil to keep warm; let rest for 5 minutes. Meanwhile cook the leftover marinade over medium heat for 5 minutes, stirring occasionally. To serve, place chicken on plate, spoon sauce over top and garnish with freshly minced cilantro.
