One 16 ounce can black beans, rinsed and drained 1 onion, chopped 1 red bell pepper, chopped Corn from 2 cobs 4 Tablespoons BBQ sauce 1 Tablespoon unsalted butter 1 Tablespoon canola oil
Melt butter with oil in a large non-stick skillet. Add onion, red pepper and corn and saute for 5 minutes. Add beans and saute for another 3 minutes. Stir in BBQ sauce, adjust seasonings and serve immediately.
For BBQ sauce: 1 cup catsup 2 Tablespoons gf brown sugar 2 Tablespoons worchestershire sauce Juice of 1/2 lemon 1/2 cup minced onion 1 Tablespoon gf hot sauce 1/2 teaspoon fresh ground black pepper
