12 ounces tofu, cut into 1/2" cubes 2 Tablespoons peanut oil 1-1/2 pounds ground pork 1/2 cup green onions, cut into 2" lengths 2 Tablespoons fresh ginger, chopped 2 Tablespoons hot black bean paste 2 Tablespoons sherry 1 teaspoon salt 4 Tablespoons gf soy sauce 1 Tablespoon corn starch 2 Tablespoons water 2 green onions, sliced
Directions
Heat oil in a wok or heavy skillet over medium-high heat. Add pork and stir-fry until browned. Add 2" green onion pieces and saute.
In a small bowl combine ginger, bean paste, sherry, salt, soy sauce, corn starch and water. Add tofu to pork mixture and toss. Add sauce to pork mixture and bring to a simmer.
Transfer to serving plates and sprinkle with green onion slices. Serve immediately.
