Ingredients
1 small garlic clove 1 Tablespoon mayonnaise 1 shallot, minced 2 Tablespoons fresh basil, chopped Salt and freshly ground black pepper Pinch of cayenne pepper 1/4 cup heavy cream
Two 6 ounce fresh tuna steaks (about 3/4 inch thick) 1 medium, ripe tomato, sliced
Directions
Preheat grill.
For sauce: Mince garlic and sprinkle with about 1/8 teaspoon of salt. Using the back of your knife, mash garlic until it forms a paste. (This will remove some of the bitterness from the garlic.)
In a small bowl, combine garlic paste with mayonnaise, shallots and basil. Season to taste with salt, freshly ground black pepper and cayenne.
Beat cream until stiff and fold into mayonnaise mixture.
For tuna: Season tuna steaks with salt and freshly ground black pepper and lightly spray both sides with olive oil.
Grill steaks for about 2-1/2 minutes, then flip steaks, topping each with a tomato slice. Continue to grill for 2-3 minutes for medium-rare or longer if desired.
To serve: Place tuna steaks on individual plates and spoon sauce over each. Serve immediately.
