Penne w/Italian Sausage & Vegetables

Ingredients

1/2 pound gf hot Italian sausage
1/2 cup red onion, chopped
1 garlic clove, minced
1 cup mushrooms, quartered
1 small red bell pepper, seeded and cut into 1/2-inch strips
1 small yellow bell pepper, seeded and cut into 1/2-inch strips
1 small zucchini, halved length-wise and sliced
One 14.5 ounce can gf diced tomatoes with basil, garlic and oregano, drained
1/4 cup gf sour cream
4 cups gf hot cooked penne (about 1/2 pound uncooked)
1/4 teaspoon black pepper
Glug of red wine
Salt and freshly ground black pepper
Directions
Remove casings from sausage.

In a large skillet, coated with gf cooking spray, cook sausage over medium-high heat until browned; stirring to crumble. Add onion and garlic; saute about 2 minutes. Add mushrooms, bell peppers and zucchini; saute about 5 minutes or until vegetables are tender and sausage is done. Stir in tomatoes; cover and cook over medium-low heat for approximately 10 minutes. Remove from heat and stir in sour cream. Stir in pasta and black pepper. Cook over medium-low heat about 3 minutes to warm through completely. Season to taste with salt and pepper.

I’m usually weary of so many vegetables (not a big pepper lover), but this came out great!
