Pork Loin w/Peppers

Ingredients

2 pork loin chops, about 1-1/2 inches thick
Salt and freshly ground black pepper
1 Tablespoon olive oil
1 Tablespoon unsalted butter
2 shallots, chopped
1 garlic clove, minced
1/2 cup gf Chicken Stock
1 red bell pepper, chopped
1 Tablespoon fresh basil, chopped
1/2 cup cream
Salt and freshly ground black pepper to taste
Directions
Preheat oven to 350°F.

In a large deep, oven-safe skillet, heat 1 tablespoon of olive oil and 1 tablespoon of unsalted butter.

Season pork loin chops generously with salt and freshly ground black pepper. Brown pork loin chops on each side (about 5 minutes per side). Transfer skillet to oven and cook for about 10 minutes or until internal temperature of chops reaches 150°F.

Remove pork loin chops from skillet and tent with foil to keep warm.

Return skillet to medium-high heat. Add shallots and garlic; sautéing for 3 minutes. Add chicken stock to skillet and deglaze by scraping up browned bits on bottom of the skillet. Reduce mixture by half. Add peppers to skillet and sauté until just tender. Reduce heat to medium-low. Add basil and cream; stir to coat. Let simmer for 2 minutes. Adjust seasonings to taste with salt and freshly ground black pepper.

To serve, spoon pepper mixture over chops.

Your site is really usuefl and Im glad to know there are people out there like you who put so much effort into compiling and researching something like this. Its a comforting feeling. A gluten-free diet isnt necessarily easy so thanks for helping
