Ingredients
3/4 pound shrimp, peeled & deveined 1 shallot, minced 1 garlic clove, minced 2 teaspoons olive oil 12 ounces gf penne 2-3 Tablespoons unsalted butter 1/2 cup heavy cream 1/2 cup Parmigiano Reggiano, grated 2 Tablespoons fresh basil Salt and freshly ground black pepper to taste
Directions
In a medium skillet heat 2 teaspoons olive oil over medium heat. Add shallots; sautéing for 2 minutes or until tender. Add garlic; sauté for 30 seconds. Add shrimp and sauté until pink and opaque about 2-3 minutes. Remove from heat and set aside.
Meanwhile, prepare pasta according to package directions. Drain. Return pasta to pan and add butter, cream and Parmigiano Reggiano cheese. Toss until pasta is completely coated. Add shrimp and basil; mix briefly. Adjust seasonings to taste with salt and freshly ground black pepper.
