3-4 chicken breasts, boned & skinned & cut into 1" cubes 1 red bell pepper, cut into strips and the strips cut in half 1 onion, sliced 3 garlic cloves, minced 1 jalapeno pepper, minced 1/4 cup cilantro, chopped 3 Tablespoons olive oil 1/2 teaspoon cumin powder 1 Tablespoon chili powder 1 cup cream 2 tomatoes, peeled, seeded & finely chopped Salt and freshly ground pepper to taste
Directions
Add 2 tablespoons oil to a large, heavy skillet over medium-high heat. Add chicken and saute until it loses its raw appearance. Remove to a plate.
Add remaining oil and add red pepper and onion. Saute until vegetables are just tender. Add garlic and jalapeno and saute for 1 more minute. Remove to plate with chicken.
Add cream to skillet and bring to a simmer. Add tomatoes, cumin and chili powder. Let cook until sauce reduces and thickens. Add chicken and vegetables back to the skillet of sauce and toss to coat.
Stir in cilantro and season to taste with salt and pepper. Serve immediately.
