Rice Noodles w/Pork & Basil

Ingredients

12 ounces rice sticks
3 Tablespoons peanut oil
2 cups pork loin, trimmed and cut into bite sized pieces
1 Tablespoon fresh garlic, minced
4 green onions, chopped
1/4 teaspoon red pepper flakes
1 teaspoon sugar
Salt and freshly ground pepper
2 Tablespoons fish sauce
1 Tablespoon lime juice
1/2 cup chopped basil
Directions
Soak rice noodles in hot water for about 30 minutes.

In a large heavy skillet heat 2 tablespoons oil over medium-high heat. Add pork and stir-fry quickly until browned on all sides. Remove to plate.

Add remaining oil to skillet; add garlic and green onions and stir-fry for about 1 minute. Add noodles and toss with sugar and red pepper flakes. Season to taste with salt and pepper. Add fish sauce and lime juice.
Add basil, toss and serve immediately.

This is a great recipe. Getting everything to stirfry properly is probably the biggest challenge, but it has a lot of flavor. It is much spicier than what you might first think, probably not for people who don’t like a lot of spice on their food.
