12 ounces rice sticks 3 Tablespoons peanut oil 2 cups pork loin, trimmed and cut into bite sized pieces 1 Tablespoon fresh garlic, minced 4 green onions, chopped 1/4 teaspoon red pepper flakes 1 teaspoon sugar Salt and freshly ground pepper 2 Tablespoons fish sauce 1 Tablespoon lime juice 1/2 cup chopped basil
Directions
Soak rice noodles in hot water for about 30 minutes.
In a large heavy skillet heat 2 tablespoons oil over medium-high heat. Add pork and stir-fry quickly until browned on all sides. Remove to plate.
Add remaining oil to skillet; add garlic and green onions and stir-fry for about 1 minute. Add noodles and toss with sugar and red pepper flakes. Season to taste with salt and pepper. Add fish sauce and lime juice. Add basil, toss and serve immediately.
