Ingredients
3/4 pound salmon filet Salt and freshly ground black pepper 1 teaspoon olive oil 1-1/2 Tablespoons unsalted butter 2 Tablespoons dry white wine 1 Tablespoon Italian parsley, chopped
Directions
Preheat oven to 400°F. Remove all bones from filet. Season filet with salt and freshly ground black pepper.
Rub bottom of a square baking dish with olive oil. Arrange filet in baking dish skin-side down. Dot top of filet with butter and drizzle with wine. Sprinkle with parsley.
Bake for about 12 minutes per inch of thickness or until fish flakes easily with a fork.
Spoon melted butter and pan juices over top of salmon and serve.
