Scallion Orange & Beef Stir-fry

Ingredients

For marinade:
12 scallions, chopped
1 flank steak, cut across the grain into 1/4" thick strips
2 Tablespoons gf soy sauce
2 Tablespoons rice wine
1 teaspoon sesame oil
1 Tablespoon minced fresh ginger
1 garlic clove, minced

For seasoning:
Zest from one orange
1 jalapeno pepper, minced
1 Tablespoon minced scallions
1 garlic clove, minced

For sauce:
1/2 cup gf chicken stock
3 Tablespoons gf soy sauce
2 Tablespoons rice wine
1 Tablespoon rice wine vinegar
1 teaspoon sugar
1 Tablespoon corn starch
2 teaspoons sesame oil
Peanut oil for frying
Directions
Mix all marinade ingredients and toss with steak strips and let marinate for 30 minutes.
Mix all seasoning ingredients together in a small bowl.
Mix all sauce ingredients in a small bowl.
Place a wok or skillet over high heat and add 2 Tablespoons oil. Add 1/3 of the beef and fry for 2 minutes. Remove to a plate and continue with the rest of the beef. Add enough oil to the wok so that you have 2 Tablespoons and add the seasonings. Stir-fry for 30 seconds. Add sauce ingredients and stir and cook until thickened. Add beef back to pan and cook and toss for 1 minute. Serve immediately over rice.
Tips
Serve with plain white rice.
