2 large garlic cloves, minced 2 Tablespoons gf dijon mustard 3 Tablespoons olive oil, divided 1 teaspoon salt 1/2 teaspoon freshly ground black pepper 1 pork tenderloin, trimmed
Directions
Preheat the oven to 425°F.
In a small bowl, combine the garlic, dijon, 2 tablespoons olive oil, salt and pepper. With a pastry brush, brush garlic-dijon mixture on all sides of the pork tenderloin.
In a large oven-safe skillet, heat remaining tablespoon of olive oil. Brown pork on all sides, about 5 minutes total. Transfer skillet to the oven and roast for 20-30 minutes or until a thermometer inserted into the thickest part of the pork registers 155°F. Transfer pork to a platter and tent with foil to keep warm. Let pork rest for 5 minutes. Cut pork into 3/4-inch thick slices and serve.
