1/4 cup olive oil 1 teaspoon lemon zest Juice of 1 lemon 1 teaspoon gf soy sauce 1 teaspoon chopped fresh rosemary 1 teaspoon chopped fresh thyme 3 cloves garlic, minced 1 shallot, chopped 1/8 teaspoon cayenne pepper Kosher salt and fresh ground pepper 1 chicken, quartered, washed and trimmed 1 cup water
In a sealable plastic bag add all ingredients except chicken and water and blend well. Add chicken quarters and marinate in refrigerator overnight. Preheat oven to 425 degrees F. Place chicken on a rack in a roasting pan, reserving marinade, and add the water to the pan. Roast for 50 minutes, basting occasionally. Chicken is done when an inserted thermometer registers 180 degrees F. Serve immediately.
