1 Tablespoon honey 1 Tablespoon red wine vinegar 1 teaspoon dry mustard 4 pork medallions Salt and fresh ground pepper 2 Tablespoons canola oil
Combine honey, vinegar and mustard in a small bowl and mix well. Sprinkle pork with salt and pepper and brush with honey mixture. Heat a large skillet over medium-high heat and add oil. When hot, add pork and cook until browned on both sides and somewhat firm when pressed with a fork.
