1/2 stick unsalted butter, softened 1 chipotle chile (canned in adobo sauce - check ingredients to make sure it is gf), finely chopped, 2 teaspoons of the adobo sauce 1-1/2 lb. salmon fillet Salt and freshly ground black pepper Fresh cilantro and lime wedges for garnish (optional)
In a medium bowl, mash together the butter, chipotles and adobo sauce. Adjust seasonings with salt and freshly ground black pepper.
Place the salmon, skin side down, on a foil lined baking sheet. Dollop with half the chipotle butter. Broil 5-7 inces from the heat for 7-10 minutes or until fish flakes easily with a fork.
Garnish with fresh cilantro and serve with lime wedges and additional chipotle butter.
