2 Tablespoons gf flour 2 teaspoon curry powder 1/4 teaspoon salt 1-1/2 lbs. cod fillet 1 Tablespoon unsalted butter 1/2 cup gf Chicken Stock 1/4 cup Major Grey’s Chutney 1/4 teaspoon gf hot sauce Fresh cilantro for garnish (optional)
Place the gf flour, curry powder and salt in a shallow dish and stir to blend. Dredge the fish in the mixture on both sides.
Melt the butter in a large non-stick skillet over medium high heat. Add the fish; cook 3 minutes per side or until the fish flakes easily with a fork. Transfer fish to a platter and tent with foil to keep warm.
Add the Chicken Stock, chutney and hot sauce to the skillet and bring to a boil. Cook for about a minute, stirring constantly. Spoon sauce over fish and serve immediately.
