2 medium onions, chopped 1/2 cup thick bacon, chopped 4 medium potatoes, cubed 12 ounces milk 2 Tablespoons butter Fresh chives, chopped 1 teaspoon salt 1/8 teaspoon pepper
In a 3 quart saucepan melt 1 tablespoon butter over medium-high heat. Add onions and bacon. Cook until onions are tender but not brown. Stir in potatoes and 2 cups water, bring to a boil. Reduce heat, cover, and simmer for 10-15 minutes or until potatoes are tender.
Using a potato masher or a fork, slightly mash some of the potatoes. Stir in milk, remaining butter, salt and pepper. Cook and stir over medium heat until heated through. Do not boil.
Ladle soup into bowls and garnish with chives. Serve.
