1 lb. pork tenderloin 2 Tablespoons olive oil 1 medium onion, chopped 1 garlic clove, minced 1/4 cup + 2 Tablespoons gf ketchup 2 teaspoons gf hot sauce (more or less depending on preference) 1 Tablespoon Worcestershire sauce 2 teaspoons cider vinegar 1 cup water Salt and freshly ground black pepper to taste
Directions
Cut the pork crosswise into 1/4 inch thick slices. Cut each slice into 3 strips.
Place the olive oil in a large heavy-bottomed saucepan over medium heat. Add the onion and garlic; sauté for 5 minutes. Add the ketchup, gf hot sauce, Worcestershire sauce, vinegar and water. Simmer uncovered, stirring occasionally, for about 5 minutes. Add the pork and simmer, covered, until the pork is cooked through and tender, about 10 minutes. Transfer the pork to a platter with a slotted spoon. Bring the sauce to a boil and cook until reduced slightly and thickened, about 4 minutes. Spoon sauce over pork and serve.
