1 Tablespoon olive oil 1 1/2 cups onion, chopped 1 cup celery, finely chopped 1/2 cup gf bacon, finely diced 1 garlic clove, minced 3 cups gf chicken broth 1/8 teaspoon cayenne pepper One 16 ounce can great northern beans, drained One 14.5 ounce can diced tomatoes, drained 3 Tablespoons creamy peanut butter 1 Tablespoon fresh parsley, chopped
Add olive oil to large heated saucepan. Over medium-high heat, add onion, celery, bacon and garlic, saute 8 minutes. Add broth, cayenne pepper, beans and tomatoes; bring to a boil. Reduce heat and simmer 15 minutes. Add peanut butter, and stir until blended. Cook for 5 minutes. To serve; sprinkle with parsley.
