Penne with Sausage & Peppers

Ingredients

16 oz. gf penne pasta
1 lb. gf Italian sausage
1/2 medium red onion, chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
2 garlic cloves, minced
1/2 cup gf Chicken Stock
Dash of hot red pepper flakes
1/4 cup fresh basil, chopped
Salt and freshly ground black pepper
1/4 cup Parmigiano Reggiano cheese, grated
Directions
Cook the pasta according to package directions; drain and set aside.

Heat a large Dutch oven or large saucepan over medium high heat. Add the sausage and brown, breaking up the sausage into small pieces as it cooks. Transfer the sausage to a plate. Drain off all but about 1 tablespoon of fat. Return the pan to the heat and sauté the onion and bell peppers for about 6 minutes or until just tender. Add the garlic; sauté 30 seconds. Stir in the sausage, cooked pasta, chicken broth, and hot red pepper flakes. Adjust seasonings to taste with salt and freshly ground black pepper. Reduce heat to low, and simmer, stirring occasionally, for about 5 minutes or until heated through. Spoon into shallow pasta bowls and top with parmesan cheese and basil.
